Dusted & Salty Mini Sandwich Courgette Bites 〰️

Introduction

Crispy, salty bacon. Creamy, cool avocado. Air-fried to golden perfection. This Dusted & Salty snack is ideal for those on keto, paleo, gluten-free, or sugar-free diets. Fuel your cravings with a textural adventure and find your 'dusted' balance.

For this Dusted & Salty delight, you'll need an air fryer.

Pro tip: Frozen avocado slices are easier to wrap with bacon.

Ingredients:

• 2 medium courgettes (zucchini), sliced into 1/4-inch thick rounds

• 200g halloumi cheese, sliced into squares

• 100g of sliced ham

• 2 tablespoons olive oil

• 1 tablespoon apple cider vinegar (or lemon juice)

• 1 tablespoon of Garlic powder

• 1/2 Tablespoon of Cayenne Pepper

• Dusted & Salty powdered Himalayan salt (to taste)

• Fresh parsley (for garnish)

Process:

1. Prepare the Courgette:

   • Preheat your oven to 200°C (400°F).

2. In a bowl, whisk together olive oil, apple cider vinegar (or lemon juice), garlic powder, and Cayenne Pepper (if using).

3. Toss the courgette rounds in the glaze, ensuring they're coated on both sides.

4. Arrange the courgette in a pan and fryer for 8-10 minutes, or until tender and slightly caramelized.

5. Grill the halloumi slices for 2-3 minutes per side, or until golden brown and slightly softened.

6. Once the courgette and halloumi are cooked, let them cool slightly.

7. Then we are going to place the Ham in the Air-Fryer to create a crisp on the Ham. Ham slices should be cut into a small enough sizes to fit into the courgette

8. Lay out the courgette rounds.

9. Place a slice of grilled halloumi and a piece of Serrano ham on each courgette round.

10. Top with another courgette round to create mini sandwiches.

11. Sprinkle your Dusted & Salty Powdered Himalayan salt over the finished bites.

12. Garnish with chopped parsley.
